Lemon Cheesecake Protein Bars

Healthy cheesecake? Let us guess....you're saying..."NO WAY!!!" Well, we're here to tell you..."YES WAY!" This recipe is to die for and guess what?? It's protein packed and a clean version of the decadent treat we all know and love. Yep...cheesecake just got healthy and delicious too! But don't take our word for it...try the recipe out for yourself!

Here's all you need to make these kick-a$$ bars yourself:

Lemon Cheesecake Protein Bars

INGREDIENTS:

  • 1 Whole Egg
  • 2 Egg Whites
  • 8 oz Softened Fat-Free Cream Cheese
  • 1/2 Cup Instant Nonfat Dry Milk
  • 1 tsp Grated Fresh Lemon Zest (an entire lemon)
  • 2 Tbsp Fresh Lemon Juice (squeeze those babies!!)
  • 1/4 Cup Unsweetened Almond Milk
  • 3/4 Cup Low-Carb Low-Fat Vanilla Protein Powder (We used Dymatize!)
  • 3/4 Cup Stevia Granular, Or Sweetener Of Choice. (Truvia, etc.)
  • 1 Tbsp Cornstarch Or Other Thickener

DIRECTIONS:

  1. Preheat oven to 350 degrees.
  2. Whisk egg and egg whites in a small bowl.
  3. In a separate large bowl, combine cream cheese and all remaining ingredients with a blender.
  4. Once smooth, add eggs and blend until mixed thoroughly.
  5. Coat 8x8 cooking pan with spray.
  6. Add batter.
  7. Bake for 30-35 minutes or until toothpick comes out clean when poked in the center.
  8. Allow to cool for a few minutes. Cut into 9 equal squares. Top it off with a sprinkle of stevia and lemon zest! Enjoy!

*Fit Style TIP: Don't you HATE IT when you go to cut your BEAUTIFUL baked goods and it sticks to the knife...leaving the pieces with chunks missing from the sides...and a lost opportunity to post your beautiful creation on IG?!?! We've been there! Here's how to avoid that! Don't allow your baked goods to cool completely before cutting. When cutting, use a plastic knife and cut lines using quick back and forth movements. The knife will glide through like buttaaa!!

Serving Size...we suggest two but will be proud of you if you can keep it to that!

  • Calories: 105
  • Fat: 2g
  • Carbs: 6.6g, Sugars 4.5g
  • Protein 14g

Variety is the spice of life so feel free to mix it up and substitute lime instead of lemon...or add in a dash of your favorite extract! Top it off with a sprinkle of coconut for a tropical treat!
